I eat pho 1-2x/week, and this was really, really good pho. Highly customizable, good service and prices. Even the peanut sauce was really tasty.

To start im a gluten free vegan, this alone makes it difficult to find what I'm looking for in terms of restaurants however, I must say that upon entering bamboo pho and Springroll today I was greeted by a very nice women who walked me through the menu helping me decide on dishes that fit my needs. I settled on the veggie pho and veggie spring rolls. I've been to many Pho places all throughout the Dallas-Ft. worth metroplex. I can say without a doubt that this place has the best veggie pho and Springs rolls I've had out of many other places I've tried. First, the spring rolls were actually edible. Any other time I've had them from other places they've been tough and I've not been able to actually chew the rice wrapping, making a huge mess! This place does spring rolls right because I was able to eat the whole roll without it making a huge mess and it was fresh and flavorful! The only downside is it was a bit pricey for one roll cut into 2 pieces but definitely worth it imo. The pho broth had color!! This is huge in veggie pho, typically it is colorless and flavorless. This broth was a nice golden color and had great flavor. I wish it had more veggies, but aside from that it was very good! Overall I will return. I found it very impressive that they took the time to help me understand the menu and to avoid any things I could not have!
