Birch was that rare, lucky find that exceeded its promise of an exquisite dining adventure. Birch features a "tasting menu", 7 courses, with an optional "wine pairing" (recommended) for an additional (and quite reasonable) charge. Each course is announced as it is presented. Prepare yourself for awe and wonder. Reservations will seem scarce. There were two sittings, each for up to three parties, per night. Phenomenal seven course food and wine pairing for a price that can't be beat. All of the dishes were elegant and delicious, the wine was spot on, and service was cheerful, smart and crisp. It's incredible that a 3 person team is serving up one of Seattle's best restaurant experiences and best kept secrets. You must go as it's only open for two months each summer. Hugely memorable experience; we look forward to coming back.
