The beet salad was soggy, the fish was very dry and under seasoned. Maybe they think charring (and overcooking) is seasoning. Skip the duck fat fries and get McDonald’s instead - save your money. The only redeeming factor was the wine.

First time in 35 yearsI sent an overcooked $50 steak back to the kitchen after cutting into it and realizing that it was not prepared as the medium rare temperature that I ordered. It was closer to medium well. Five minutes after the steak left the table, the manager and the server returned the steak back to me with several additional cuts into the steak and proceeded to insist that "the steak was prepared properly close to the middle". I reluctantly kept the steak and ate the outside edges, which was closest to medium temperature. In thirty five years of dining in hundreds of restaurants, I have never experienced this. Needless to say, I didn't set out to spend $50 plus tip on the center of a steak. There are many great Knoxville restaurants that will be getting my budget for dining out and entertaining in the future, but Bistro By The Tracks will not be one of them. Additionally, the person hosting the dinner, and all of the attendees were in shock as they had never experienced this in their lifetimes. I realize that margins may be thin in the restaurant business, but the decision to challenge a customer over their preference of temperature seems very short sided, especially given the world of social media we live in today. Prices are on the rise for everything we buy these days, shouldn't we expect customer service to rise with them.
