Great food. Beet salad was delicious. Beer was super cold AND service was friendly and prompt which is getting harder to find.

I have never posted a restaurant review before, although I read them all the time.   But I  had a lot of opportunities to eat at the Blu Stone Bistro this past weekend because I was staying at the adjoining Hotel Indigo, and I was very impressed.   The reason for my stay was a funeral in the area; some of the meals I had at Blu Stone were just by myself or a few other people and some of them were with large groups of my family.  So let me break this review down by  category: Solo and small group meals:    We all know the type  of food you usually can expect when eating at a hotel restaurant or when on the road -- the greasy heavy fried variety, or wilted salads.   At Blu Stone, I was able to eat light and fresh at every meal.  The salad was definitely  green, lightly dressed and yummy.   I did indulge in the Irish Nachos (something like a loaded potato) which was very filling but good.  For breakfast,  I had the yogurt parfait at least two times and waffle once; all served with fruit, fresh and tasty.  More substantial fare was available, but I just didn't get a chance to try it. Big Group Dinner on Saturday, 6/23:  I am so sorry I  didn't get the name of the amazing waitress who served our table on Saturday.  There were nine of us, on six different checks.  She was so competent in taking and fulfilling our orders, splitting our checks, and providing great service without breaking the flow of our table conversation.  She got (and earned) a round of applause from us.   Thank...
