I'm late to the game because I'm not on Facebook or Instagram, but often hear of these epic Filipino pop-ups that occur all over Seattle, often sold out by the time I learn about them. Despite a fairly sizable local Fil/FilAm population, we are stealthy and blend in. When asked where's a good Filipino restaurant, one can count them on one hand or reply Nanay's (mom) or Lola's (grandma). The trend of Filipino food being inventive beyond the triad of adobo, lumpia, and pancit or fat and carbs is thrilling. Even culinary personalities like Anthony Bourdain and Andrew Zimmern featured Filipino cuisine. This hasn't even scratched the surface with all the various regions from the collective 7000+ islands that comprise the Philippines. Last night, I asked Tremor at JuneBaby what's Elmer up to these days. Got an update, including his involvement with a pop-up today ($40, not including beverages or gratuity,11/19/17) at Bar del Corso, called Brunch with Musang. This is led by Chef Melissa Miranda (culinary training in Italy and Maharlika in NYC, was on a Bravo culinary show, and sous chef at Bar del Corso). Most of the seatings were sold out, but *finally* snagged a 230pm seating. Pouring down rain and crappy I-5 southbound from Shoreline bit big time.
