There were two employees to do five employees' work. Consequently, the tables were filthy and most of the coffee was empty. They handled their situation with grace and class and did manage to put out excellent food in spite of it all, but the fat cat owners really need to pay employees enough so someone will actually work for them. Their sign says "up to $15 per hour," but their best employees are making $12 an hour to work themselves into the ground. In Asheville, the average one bedroom apartment is $1200 a month. At $12 per hour, a full time employee makes $480 a week. That means they take home around $385 if they're lucky. When you take home slightly less than $1600 a month, it's pretty hard to pay $1200 of it in rent. Pay your people enough to live and you'll have enough employees to have a restaurant that is up to Panera Bread's standards. You certainly charge enough money that you can afford to pay your workers a living wage.
