This place is open of the best distilleries I have been to in a long time. The staff is super nice and knowledgeable. The spirits are great and they have a lot of unique flavors, and the authmosphere is really super cool.We tried a couple of different drinks, and I really enjoyed the New Fashioned, it is a nice twist to the Old Fashioned which is one of my fav ‘go to’ drinks. My wife really enjoyed her drink for two reasons. One she choose a drink that tasted delicious, and second she considers it a big win, when she gets a drink in a fancy glass.The bartenders are just awesome. They are very nice and talkative (in a good way). One of my favorite things to ask when we are in places that serve cocktails is to ask what is their ‘signature drink’ that they know how to make. She did NOT disappoint me at all. It was so good (and spicy) that i asked her to write it down so we can enjoyed it at another time.The place is also vegan. When i told my friend he was confused, as i was, until we asked more details. Well all their products are vegan which means they have alternatives. Once such product was a egg free foam, which is great as my wife is egg intolerant. The craft cocktail scene here in Knoxville is still somewhat on the rise. Not enough people are talking about it, due to how big craft beer is getting. Not that there's anything wrong with craft beer. Lord knows I imbibe more than a fair share. Places like the Peter Kern Library, Oliver Royale, Central Depot, and PostModern Spirits are each doing their own take on elegant cocktails, and boy is it welcome. PostModern Spirits seems to constantly be challenge themselves when it comes to the cocktail game. They have ever-evolving menus, but I also love leaving it up to the bartenders to create a cocktail they think I'd enjoy. So far, they're batting 1.000! Not only does PostModern Spirits have some of the best and most unique cocktails in town, but they also manufacture their own spirits. Each one has a great story and reasoning why it's different from the other. I love their whiskey, and have given a ton of their blended creations as gifts.
