In Seattle, you will find the best Mandarin Noodle House on the hill. Introduced by a friend to me. I asked if we could go back on my way back to the airport. This is Qin Xi An.I got soup the first day. And noodles the next. This is the vibe of Japan's Midnight diner. Just a dude there by himself most days all day and night. The language barrier will be challenging if you don't know Mandarin. But he is so nice and friendly and humble. I can't remember the number this dish was. I think 14A. The dumplings. Amazing. And it's fairly inexpensive compared to other restaurants...

Was really excited to try this place until I saw the "okay" rating from the food department displayed... very disappointing. Hoping things will be better in the future.

If you are looking for some delicious filling hand pulled noodles - be sure to stop by Qin Xi'an Noodles! We arrived on Sunday at 11:30AM and were seated promptly. Just to note, the restaurant is in an area that has mostly street parking, and we did have to do a fair bit of walking (~10 minutes) to reach the restaurant. We got a good variety of appetizers to share among us and I also got two dishes for my entrée, I'll review them below: Marinated Pigs Ear: This dish was crisp in its texture and had a good flavor. It wasn't too spicy, though with the appearance of the dish being covered in hot oil and spices. I enjoyed this appetizer dish and it did have a nice cold refreshing taste that contrasted with the heartiness of the noodle dishes. Steamed Chicken in Special Chili Sauce: Flavor-wise the chicken was tender and had good spicy flavor. But the dish itself definitely needed more salt, there was the initial taste of the peppers and oil but just needed more savory flavor. Once again, the dish in the picture does look spicy, but was not spicy at all. Spicy Cumin Beef Biang Biang Noodles: Wow, these noo...
