Been coming to Ray Hay's for over 35 years, and it never disappoints.  Love their style of gumbo roux, wish I could duplicate it myself at home!  Po-boys are good size - enough to split into two meals.  Ragin' Cajun has spruced up the place a little over the past few years which has taken some of the old lower-Louisiana character out of the place, but it's still the place to go for Cajun in Houston!
