On our last day in Seattle, we finally made it out to Skillet Capitol Hill! We ordered some mimosas, their Chicken and Waffle plate and The Chub sandwich. WOW - is my unfiltered reaction to their food. The batter they use to fry the chicken had flavors of fennel, black pepper and other savory seasonings that made it all so good while keeping the chicken itself really juicy. Their waffle tasted like a cornmeal mix which was the perfect compliment to their chicken. The Chub was SO tasty and rich which the Brie cheese and bacon. Aside from the food itself, I want to applaud this establishment for their covid-19 protocols. They space people out with barriers but also require masks when interacting with waiters/hosts which is really important for everyone's safety.
