Had the brisket melt at Bristol Rhythm and Roots this weekend. I imagine when/if I reach heaven, this will be served daily. Brisket was perfectly smoked, texture was spot on. Pimento cheese was sharp and rich. The jalapeños added just the right amount of heat. Loved it. The only thing I might change if I'm being silly-picky is that I'd like to try the same sandwich with candied jalapeños instead. I got salty, fatty, smoky, crunchy, rich, and spicy. Maybe some faint sweetness would take it next-level.
