Eggplant Parmesan. Wow.The fried breading on the eggplant was crisp and the eggplant was tender yet firm. Not over or under cooked. Just delicious. Not too much cheese. Perfect ratio. Great flavor and mouth feel. I don’t know when I’ve had eggplant Parmesan this good.
