Ever since Guy Fieri did an episode about bamh xeo for Diners, Drive-thoughs and Dives, I've been on an endless hunt for the perfect banh xeo. Hell, I craved it so much one night that I even hauled ass to the nearest Asian grocer with a recipe on hand and got all the ingredients to attempt to make it myself. This is how I know how hard it is it make a perfect, crispy, aromatic banh xeo. After trying dozens of ban xeos that were paper-thin, soggy excuses, I finally came across Thuan Kieu Com Tam. My friends and I ordered the spring rolls and a couple traditional dishes to start, all of which were tasty. But when the waitress brought out the banh xeo, it was like the skies opened and celebratory trumpets blared out to announce its holy arrival. The crepe was as big as a lumberjack's foreams, and it wafted a fragrant, delicate coconut scent that smelled like a baby angel's tears. The banh xeo was cooked to crisp perfection and had a strong coconut milk taste, and was heaped on with piles of shrimp and bean sprouts. It was served with a plate of lettuce and mint, which complemented the sweet crepe. I wanted to cry during each bite, and thought to myself, I could die in peace knowing I had eaten a perfect, heavenly banh xeo and could rest in peace finally.
