Vanilla Bean

Vanilla is a complex flavor with over 200 compounds that give it its unique taste. We use organic bourbon and Tachitian vanilla pods grown in Papua, New Guinea. The beans are cured in the sun concentrate flavor, then cold ground and steeped in our rich custard base. Using the entire bean allows all the pod pulp to come through, resulting in a wonderfully nuanced and balanced flavor. For this American classic we use pure organic peppermint and Askinosie single origin 72% chocolate chips. We create this flavor by folding organic ginger juice, candied ginger pulp and chunks of candied ginger into our sweet cream base. All of our ginger is organically grown in Fiji and is harvested very early to ensure a fiber-free texture. It is candied in closed kettles, creating an awesome intensity of flavor. For this American classic we added Tahitian vanilla and a pinch of Maldon salt to our sweet cream base. For the cookie dough we use locally milled flour and generous amounts of Askinosie 72% chocolate chips. We then mix chunks of the dough throughout. Chocolate Banana Cream Pie

One of our all time favorite pies. We caramelize organic bananas with butter and salt, then puree and mix them into our sweet cream base. Next we make a buttery sweet pie crust and spread it generously with house-made Michel Cluizel chocolate fudge and break that into chunks which we fold into the sweet, creamy, slightly salty banana ice cream. We upped the ante on this American classic. Lemon Meringue Yogurt Tart

We get the best tree ripened lemons and make a curd using their juice and rind. we then cover sweet house-made graham cracker tart crust with this curd, break it up, and fold it into a base of ultra rich yogurt ice cream. Vegan Honeycomb

Surprisingly made using no honey at all, honeycomb is a crunchy, chewy caramel candy. We make ours in-house, break it into chunks and fold it into our vegan base.
